AOTECH develops AO‑WINE: an intelligent probe for real‑time monitoring of wine fermentation
AOTECH continues to strengthen its commitment to innovation and digitalisation in the enology sector through the AO‑WINE project—an advanced technological solution designed to transform how wineries control fermentation processes. The project is funded by SPRI within the Fast Track Innobideak 2025 programme, which aims to drive competitiveness and modernisation across the Basque industrial ecosystem.
A key challenge: enabling the digital transformation of the wine sector
Today, the wine industry lacks accessible, standardised systems capable of providing automated, online, and continuous monitoring of fermentation processes. This gap limits operational efficiency, traceability, and the ability of wineries to make real‑time, data‑driven decisions.
AO‑WINE has been conceived to address this need through the development of an intelligent fibre‑optic probe, capable of accurately monitoring alcoholic, malolactic, and acetic fermentations in both stainless-steel tanks and wooden barrels.
AO‑WINE: technology at the service of enology
The new probe developed by AOTECH will enable wineries to access critical real‑time information, leading to:
