Launch of a new project: OPT2CHEESE

AOTECH is proud to announce its participation as a technological partner in the OPT2CHEESE project, a pioneering R&D initiative focused on enhancing cheese production efficiency. This ambitious project is being conducted in collaboration with Lácteos de Moeche, a leading manufacturing company specialising in cheese production. This initiative is proudly supported by the European cascade funding programme, GreenSME, and is set to usher in a new era of innovation in the dairy industry.

The project involves the development of a pilot test to assess the use of a photonic sensor in the rapid characterisation of milk received at Lácteos de Moeche. This sensor, developed by AOTECH, will provide the nutritional values of the milk. This will allow for better adjustment of cheese production parameters, optimising the process by acting on the curdling temperatures, cutting time and draining time.
